Breakfast Burrito

4 large eggs

1/4 cup milk

Salt and black pepper to taste

1 tablespoon olive oil

1/2 cup diced bell peppers (red, green, or both)

1/2 cup diced onions

1/2 cup diced tomatoes

1/2 cup cooked and crumbled breakfast sausage or diced cooked bacon

1/2 cup shredded cheddar cheese

4 large flour tortillas

Salsa, for serving (optional)

Chopped fresh cilantro, for garnish (optional)

  1. In a bowl, whisk the eggs, milk, salt, and pepper together.

  2. Heat the olive oil in a large skillet over medium heat. Add the diced bell peppers and onions and sauté until they're tender, about 5 minutes.

  3. Add the diced tomatoes and cooked sausage or bacon to the skillet. Cook for another 2-3 minutes, allowing the ingredients to heat through.

  4. Pour the egg mixture into the skillet with the vegetables and meat. Cook, stirring occasionally, until the eggs are fully cooked and scrambled.

  5. Warm the flour tortillas in a dry skillet or microwave them for a few seconds.

  6. Place a portion of the scrambled egg mixture in the center of each tortilla. Sprinkle shredded cheddar cheese on top.

  7. Fold the sides of the tortilla in and then roll it up to create a burrito.

  8. Serve the breakfast burritos with salsa and garnish with chopped fresh cilantro if desired.
